Medium sized, green, pitted Manzanilla olives have a good proportion of flesh to stone. They have a mild, gently bitter flavour which harmonises well with the spicy marinade, which gets its heat from chopped pieces of pickled guindilla chillies. The Manzanilla olive is a quintessential Spanish olive and the most popular table olive in Spain and fantastic with a martini.
