“Arrabbiata” Tomato Pasta sauce (Tomato and Chilli Pepper Pasta Sauce), also called “ Sugo all’Arrabbiata” in Italian, is a spicy sauce for pasta, that belongs to the Roman cooking tradition. It is made with tomatoes, carrots, onions, garlic, parsley and red chili peppers cooked in olive oil.
Arrabbiata, which literally means “angry” in Italian, owes its name to the piquant taste.
Arrabbiata sauce combines perfectly with any plain pasta dish. It is
often best enjoyed with penne, which are small ridged tubular pasta.
The ridges help hold the sauce, and the tubes can also fill with the sauce
creating tasty mouthfuls with each bite. When cooking dishes, like “Penne
all’Arrabbiata” it’s important to make more sauce than needed, in order
to have adequately coated pasta, since part of the sauce will be readily
absorbed by the pasta.
