Lechoso chickpeas are creamy with a distinct flavour of fresh lactic notes balanced by rich hints of raw nuts, in fact their name translates as milky. Ready-cooked large, pearly chickpeas, which are firm but giving, the chickpeas hold their shape well during cooking. The texture is quite dense on the tongue, but they break down quickly to produce a silky, slightly fudgy mouthfeel. An excellent all-round pulse that works well in stews, salads or as the basis for excellent hummus.
