Medium sized, round Spanish green pitted Manzanilla olives have a good proportion of flesh to stone and have a mild, gently bitter flavour which harmonises well with the spicy marinade, which gets its heat from chopped pieces of pickled guindilla chillies. The Manzanilla olive, a quintessential Spanish olive, is the most widely eaten table olive in Spain and fantastic with a martini. Free from artificial additives.
