Pesto Verde (Green Pesto) is an Italian dark green sauce for pasta originating in Liguria region. It’s made with basil, extra virgin olive oil, Grana Padano and Pecorino Romano cheese. It is an uncooked sauce preserved in glass.

is now a ubiquitous ingredient in everyday home cooking. Its heady
